More of Lilly's favorite recipes are coming soon...including vegan blueberry cornbread, her simple but tasty spice cookies, and other delightful, delicious vegetarian specials. In the meantime, here's a really great cake that's easy to make.

Lilly Belle’s Favorite: Devil Fooled-You Cake
(It is vegan and it is carob, not chocolate. So, yeah, yeah, I hear you chocoholics, but this is a very tasty, moist cake, easy-to-make, reasonably healthy, and if you just have to have chocolate, substitute unsweetened cocoa for the carob and drop the tablespoon of molasses)

1 cup of white pasty flour (preferably organic)
1/2 cup of whole wheat pasty flour (preferably organic)
1 cup of turbinado or raw or brown sugar (or just sugar)
1/4 of carob power (available in health food stores if not in your grocery store)
1 teaspoon of baking soda
1/8 teaspoon of ground cloves
1/2 teaspoon of ground nutmeg
1/2 teaspoon of ground ginger
1 teaspoon of cinnamon
1 teaspoon of vanilla
1 tablespoon of white vinegar
6 tablespoons of canola oil (preferably organic)
1 tablespoon of molasses (preferably organic)
1 cup cold water

Oil an 8” square baking dish, or a bunt cake pan (this small amount of batter makes a short bunt cake, but still looks nice)

In one bowl, mix all the dry ingredients. Be sure to smash those lumps of baking soda and mix well.

In another bowl, mix the wet ingredients.

Stir only until no lumps remains. Don’t beat it too much or too long.

Pour into oiled baking pan.

Cook in a preheated oven at 350 for about 30-35 minutes. Check this cake at 20 minutes. You know the trick—if the knife comes out clean, it is done.

Serve alone, or with orange sauce, or apple sauce, or, yeah, okay, ice cream. For the true vegan, you know your favorite brand of non-diary ice cream.
